Seedy Oat Crackers
Bring your cheese board up a notch with these naturally good oat crackers!
Serves 20|Takes 35 minutes
INGREDIENTS:
120g of Flahavan’s oats
50g of milled flax seeds
25g of pumpkin seeds
50g of white sesame seeds
50g of black sesame seeds
25g of chia seeds
1 tsp of sea salt
1/2 tbsp of fennel seeds
1/2 tsp of dried chilli flakes
1 tsp of honey
2 tsp of coconut oil, melted
175ml of water
METHOD:
Preheat your oven to 170°C fan bake, then line 2 baking trays with baking paper.
Take a small handful of the Flahavan’s oats and toast in a frying pan until lightly golden. Meanwhile in a bowl, mix all the dry ingredients until thoroughly combined, leaving a small amount of oats aside. In a jug mix together the honey, coconut oil and water. Add to the dry ingredients and mix well until everything is combined properly.
Divide the mixture evenly between the two lined trays, place another piece of baking paper on top and use a rolling pin to even out the mixture until it is about 1⁄2cm thick. Peel back the greaseproof, sprinkle with the few remaining oats, recover with the baking paper and flatten using the rolling pin. Remove the top layer of baking and place in the oven for baking.
Bake for 15 minutes before removing from the oven, then flip the sheet over onto another piece of greaseproof, peel off the baking paper which is now on top and put back into the oven for another 10 minutes (or until golden around the edges and firm to touch).
Remove the crackers from the oven and allow to cool, then break into organic shapes and sprinkle with a little sea salt to taste.
